Cheesy Corn Muffins with Green Peppers

the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

A unique cornbread that contains zesty green pepper and onion!
Make great muffins that everyone will enjoy, however using a plain cast iron skillet will suffice as well (if
using a cast iron skillet be sure to bake for at least 35 minutes).
Cooking Instructions:
Prep Time: 10 minutes
Cooking Time: 15-18 minutes
*Makes about 18 servings
Ingredients:
- 2 cups all-purpose flour
- 1 cup yellow cornmeal
- 1/3 cup sugar
- 4 ½ teaspoons baking powder
- 1 ½ teaspoons salt
- ½ cup vegetable shortening
- ½ cup finely shredded cheddar cheese
- 2 tablespoons finely chopped green pepper
- ? cup chopped onion
- 1 ½ cups milk
- 2 eggs, beaten
Cooking Steps:
A) Set oven to 400 degrees to preheat and grease your
cast iron muffin pan.
B) Put your flour, cornmeal, sugar, baking powder, and salt into a
bowl and mix with a large spoon or whisk. Gradually add some of the vegetable shortening until the contents
in your bowl look like small crumbs. Then add you cheese, pepper, and onion into the mix.
C) In a different bowl, mix your milk and eggs then, once blended,
stir the mix into the other bowl containing all of the dry ingredients.
D) Once the contents of the bowl are stirred well, gently pour the
batter into the
cast iron muffin pan and set into the oven to bake
for 15-18 minutes.
