  
Classic Dutch Oven Chicken
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create
some great cast iron cooking for your family and friends!
For this recipe you may use a fryer or a small hen (stewing hen),
the stewing hen generally having more meat. It is a good idea to use a roasting rack for this dish as well,
so the chickens don't drown in the juices.
Cooking Instructions:
Prep Time: 15 minutes
Cooking Time: 1 1/2 to 2 hours
*Makes about 4 servings
Ingredients:
- 3 or
4lb whole fryer or hen
- Salt and pepper
- Juice of one lemon
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon dill or rosemary (optional)
- 1 onion, quartered
- 2 ribs of celery with tops
Cooking Steps:
a) Set oven to 325 degrees to preheat. Clean the chicken inside and out, salt and pepper the
cavity.
b) Mix the lemon juice and olive oil and rub it on the chicken, as well as the salt pepper, parsley, and
dill or rosemary. The chicken should now be well seasoned.
c) Inside the chicken, put some pieces of celery and onion, the use the rest to put around the chicken.
Carefully place the chicken on the roasting rack in your cast iron Dutch oven
(preferably 10-inch).
d) Leave it to bake for 1 1/2 to 2 hours. Take out and let it stand for about 10 minutes before cutting to
serve. Enjoy!
