Cooking Instructions:

Prep Time: 20 minutes

Cooking Time: 30-35 minutes

*Makes about 8 servings

Ingredients:

- 6 slices bacon
- 4 eggs
- ? cup milk
- ½ cup butter, melted and cooled
- 1 package (8? oz) cornbread mix
- 6 dashes hot pepper sauce
- 1 medium onion, chopped
- 1 package (10 oz) frozen chopped broccoli, thawed and drained
- 1 lb cooked shrimp, shelled and deveined
- 2 cups finely shredded cheddar cheese
- Chopped fresh parsley (optional)

Cooking Steps:

Set oven to 375 degrees to preheat.
B) Using your cast iron skillet (preferably 10-inch) cook the bacon strips. Then crumble and put aside for later use.
C) Keep a tablespoon of the bacon juice from the skillet and clean the rest off. Put the tablespoon of juice back into the cast iron skillet and carefully put into the oven.
D) In a large bowl, beat the eggs, mix in the milk, butter, cornbread mix, and hot pepper sauce. Mix well! Then add the onion, broccoli, shrimp, and 1½ cups of cheese. When it is blended nicely carefully take the hot cast iron skillet out of the oven and pour the mixture into it.
E) Evenly spread the rest of the cheese on the top of the mix in the skillet and put back into the oven.  Let it bake for 30-35 minutes. Once out of the oven you may put the bacon bits and parsley on the top. Serve and enjoy!
