  
Delicious New Potatoes
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

New Potatoes are the small rounded ones with a red colored skin.
The ones that have thin paper-like skin are prime. Be sure to pick potatoes of similar size so that they cook
evenly.
Cooking Instructions:
Prep Time: 10 minutes
Cooking Time: 40 minutes
*Makes about 4 servings
Ingredients:
- 6
tablespoons of butter
- 11 new
potatoes
- ½
teaspoon of salt
- ½ teaspoon of
pepper
- ½
teaspoon of garlic salt
- ?
teaspoon of cayenne pepper
- 1
tablespoon of chopped parsley
Cooking Steps:
A) Preheat to 425 degrees. Put your cast-iron
skillet in the oven with butter in it.
B) Sprinkle garlic salt, salt, and cayenne into the hot butter. Cut the potatoes in half and put them cut
side facing down into the hot butter for 25 minutes.
C) Rotate the potatoes and bake for another 15 minutes until tender to the touch. Garnish with parsley
after you take it out of the oven.
