Delicious Soft Shell Crabs

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

These blue crabs are extremely delicious fried, but you must be very careful when doing so! I would strongly suggest using a splatter screen. This tastes great with a nice cocktail and/or tartar sauce.

Cooking Instructions:

Prep Time: 10 minutes

Cooking Time: 6 minutes (each crab)

*Makes about 8 servings

Ingredients:

- Salt and pepper
- 8 medium soft-shell crabs, cleaned
- ½ cup all purpose flour
- ½ cup cornmeal
- 4 tablespoons
- Lemon wedges

Cooking Steps:

A) Season the crabs with salt and pepper. In a clean, large bowl mix the flour and cornmeal and coat the crabs in the dry mix.
B) Using your cast iron skillet (preferably 12-inch) place it on the stove to heat.
C) Carefully melt butter in the hot pan.
D) With extreme caution, gently place the crabs (shell side down) into the hot skillet.  Cover and cook until the crabs turn a nice red-brown color. Should take 3 minutes.
E) Flip the crabs over and cook for an additional 3 minutes.
F) Carefully remove the crabs from the cast iron skillet and use a paper towel to drain. Serve with lemon wedges and enjoy!
