the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

What could be better than waking up to some scrumptious southern
style pancakes? Their smooth texture complete with warm maple syrup are sure to satisfy that morning
hunger.
Cooking Instructions:
Prep Time: 5 minutes
Cooking
time: 1-2 minutes
*Makes about 8 servings (per side)
Ingredients:
- 1 egg
- 1 cup buttermilk
- 2 tablespoons vegetable oil
- 1 scant cup all-purpose flour
- ½ tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Cooking Steps:
A) Using your cast iron griddle, set the temperature to a
medium-high heat.
B) Beat the egg then stir in the oil and butter milk in a large bowl. Next add all of the dry ingredients
(flour, sugar, baking powder, baking soda, salt).
C) Carefully grease the griddle (it should be very hot).
D) Using 1/4 cup of the batter (or using a large spoon) pour the small amount of batter onto the
griddle. You will know to turn the pancake when the top is full of bubbles. Repeat this step until all batter
is used. Keep in mind to check that griddle is still hot and greased during process.
