  
Fantastic Pork Chops and Green Beans

the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

Center cut chops or rib chops are the cuts to choose for this recipe. A center cut chop is the most
expensive with the tenderest meat. Rib chops are more affordable but have a smaller volume of meat.
Cooking
Instructions:
Prep Time: 10 minutes
Cooking Time: 1 hr
*Makes about 5 servings
Ingredients:
- 2
pounds of green beans
- 1
tablespoon of butter
- 5
large pork chops
- 1
quartered onion
- 4
potatoes
- Salt
and pepper
Cooking Steps:
A) Wash, string, and break the bean pieces.
B) Heat the butter in your cast-iron Dutch-oven to mild heat. Brown both sides of the pork chops in the butter. Be
sure to brown them and not steam them.
C) Add the onion and 2 cups of water and the beans. Turn down the heat a little add salt and pepper and
let it simmer for 45 minutes.
D) Place the potatoes on the beans after you peel and quarter them. Simmer while covered to make the
potatoes tender.
