Fresh Seafood Chowder

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!


Make sure the mussels are alive when you purchase them to give your chowder the best possible flavor. The mussel shells will open and give it a fresh look!

Cooking Instructions:

Prep Time: 20 minutes

Cooking Time: 45 minutes

*Makes about 6-8 servings

Ingredients:

- 1 cup unsalted butter
- 2 medium onions, diced
- ½ cup diced celery
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup sliced mushrooms  1 cup white wine
- 4 cups clam juice
- Juice reserved from oysters
- 1 sprig fresh thyme
- 2 tablespoons chopped fresh parsley
- 1 can (6½ oz) chopped clams
- 8 oz shucked oysters, or 1 jar (8oz) shucked oysters
- 8 oz mussels in shell
- 8 oz salmon fillets, de-boned and cut into 1-inch cubes
- Salt and pepper
- 1 cup heavy cream

Cooking Steps:

A) Using  your cast iron Dutch oven (preferably 7-9-quart) gently melt the butter and when it begins to bubble put in the onions, celery, carrots, potatoes, and mushrooms. Cook for about 10 minutes.
B) Next ingredients to add to the cast iron oven are the wine, clam juice, oyster juice, thyme, and parsley. Raise temperature to a boil, then lower heat and cook for about 15 minutes.
C) Put the clams, oysters, mussels, and salmon in the cast iron oven and stir.  Cook for 15 more minutes and season with salt and pepper. Throw out the unopened mussels.
D) Put the heavy cream into the mix and cook for 5 more minutes. Carefully ladle the soup into bowls and enjoy!
