Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create
some great cast iron cooking for your family and friends!
This dish isn’t quite as greasy as it may sound, if you’re from
the Deep South that is! This corn recipe is simply cooked with some bacon grease, butter, milk, and flour,
but none the less tastes delicious. And while the recipe requires bacon juice there actually no need for the
bacon. However, it serves as a great side.
Cooking Instructions:
Prep Time: 20 minutes
Cooking Time: 45 minutes
*Makes about 6-8 servings
Ingredients:
- 6-8
ears of fresh corn, yellow or white
- 1
tablespoon bacon drippings
- 4
tablespoons butter
- 2
tablespoons all purpose flour
- 1 cup
milk, more if needed
- ½ cup
water, more if needed
- Salt
and pepper
Cooking Steps:
A) Clean and shuck the corn. Rinse the ears.
B) In a mixing bowl, cut the kernels off of the ears. Use the blade to gently scrape down the ear to
extract all of the juice from the ears.
C) Using your cast iron skillet (preferably 12-inch) with the bacon
juices inside melt the butter. Then add the flour, and corn milk/juice.
D) Let it cook in the cast iron skillet (stirring occasionally) and add water if needed to prevent it from
drying out. Cook for 30-45 minutes.
E) Evenly season with salt and pepper. Serve and enjoy!
