Hushpuppies
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create

friends.
It has been told that the
hushpuppy was originally developed in the early 1700s by the Ursuline nuns. The nuns had converted some cornmeal,
given to them by Native Americans, into a scrumptious fritter called croquettes de maise. An old Creole cook was frying
some catfish and croquettes in a cast iron skillet when the name hushpuppy came about. The cook’s dogs would whine
in anticipation for a chance to consume some of the catfish. The inventive cook would instead throw a few
croquettes de maise to the dogs and
say, "Hush, puppies!" Ever since, the cornmeal delight has been associated with that
name.
Cooking Instructions:
Prep Time: 15 minutes
Cooking Time: 3 minutes
*Makes about 6-8 servings
Ingredients:
- 1 cup self-rising flour
- 1 cup self-rising cornmeal mix
- ½ teaspoon salt
- 1 teaspoon sugar
- 1 egg, beaten
- 1 cup buttermilk
- ½ cup chopped green onion
Cooking Steps:
A) Using a
cast iron fryer , set the preheat temperature
to 375 degrees for the oil.
B) In a mixing bowl, blend the flour, cornmeal mix, salt, and
sugar. Then, add ½ cup of buttermilk and the egg to the dry batter. Next, you want to add in the onions
and stir.
C) You want your batter to be well mixed. Add small portions
of buttermilk gradually until the batter is satisfactory. Let it sit for 10 minutes.
D) Using a large spoon or ladle, drop spoonfuls into the oil
and fry until it becomes a golden brown color.
