  
Homemade Hamburger Cornbread Surprise
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

This is one of the most delicious dishes in the cornbread-meat
category. Served with a spoon to gather all of the juicy flavor hidden under a warm cornbread crust! Your
children will be begging for seconds and your neighbors will be anxious to come over for
dinner.

*Makes about 6-8 servings
Ingredients:
- 1 pound ground beef
- 1/3 cup chopped onion
- 5 tablespoons vegetable oil
- 1 can (14 oz) stewed tomatoes, chopped
- 1 teaspoon Worcestershire sauce
- ? teaspoon salt
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 egg
- 1 ? cups milk
- 2 cups white self-rising cornmeal mix
- 2 cups finely grated sharp cheddar cheese
Cooking Steps:
A) Set oven to 425 degrees to preheat.
B) Using your cast iron skillet (preferably 10-inch), warm up 1
tablespoon of vegetable oil and cook the ground beef and onion. It should sizzle! And remember to drain the
fat.
C) Next your want to add the tomatoes, Worcestershire sauce, and sauce into the cast iron skillet. Cook for 15 minutes!
D) Add the beans and cook for another 5 minutes. Then remove the skillet from the heat.
E) In a large bowl, stir the egg, milk and rest of the vegetable oil together. Also stir in the cornmeal
mix. Mix well!!
F) Carefully pour the cornmeal mixture over the beef in the cast iron skillet, and cover the top with some
grated cheese. Bake for 20-25 minutes and serve! Caution, it will be very hot
