  
Juicy Beef Filets
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create

Sealing the juices into your filet is the key to have that mouth
watering taste. Also, adding peppercorn sauce really completes the dish giving it that extra zest. This dish
is easy to make and will only take about twenty minutes!
Cooking Instructions:
Prep Time: 5 minutes
Cooking Time: 10-12 minutes
*Makes about 2 servings
Ingredients:
- 2
filets of beef tenderloin, about 2 inches thick
- 2
tablespoons clarified butter, or vegetable oil
- 1 cup
white wine or vermouth
- 1
tablespoon green peppercorns 1½ tablespoons salted butter
Cooking Steps:
A) Set oven to 500 degrees to preheat.
B) Using your cast iron skillet (preferably 10-inch), place it on a burner to heat and place butter in
the skillet. Place the steaks in as well and cook for a minute.
C) Once the steaks are browned on one side flip them and cook the other then remove from the cast iron skillet.
D) Cook the steaks for 5 minutes in the oven and then take them out. Gently place them on serving
platters.
E) In the cast iron skillet, add wine and peppercorns. Lower the heat a little and add butter. Then pour
the sauce over the filets. Serve and enjoy!
