Lightly Fried Eggplant

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

Often, when one is looking to buy an eggplant from the market they aren’t quite sure what to look for that indicates it is a good buy. What you want is an eggplant that is firm and has a deep coloring to it. Getting an eggplant that weighs about 1-2 pounds should be plenty to feed four people.

Cooking Instructions:

Prep Time: 35 minutes
Cooking Time: 6 minutes per batch
*Makes about 6 servings

Ingredients:

  • 2 eggplants
  • Salt and pepper
  • 1 egg, slightly beaten
  • ½ cup milk
  • 1 cup of all purpose flour, or more
  • Vegetable oil to fill skillet ½-inch deep

Cooking Steps:

A) Cut the eggplants into ½-inch slices. In a bowl with salted water, carefully put the eggplant slices in and keep soaked in the water. Let it sit for 30 minutes, then pour the water out and put the eggplant on wax paper. Evenly season with salt and pepper.
B) In another bowl mix the egg and milk and put flour on another sheet of wax paper.
C) Get your baking sheet ready (cover with some wax paper).
D) Now, slowly coat the eggplant into the egg/milk mix and then cover in a light film of flour. Put the eggplant on the baking sheet.
E) Using your cast iron skillet (preferably 12-inch) heat the vegetable oil.
F) Carefully put the slices of eggplant into the skillet and cook each side for 3 minutes. Serve and enjoy!
