Momma's Savory Chicken Potpie
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create

Contrary to popular belief, chicken potpie is truly not difficult
to make and doesn't include long hours of work. All you need is some leftover chicken, and already made pie
crust, and about 15 minutes to prepare. In no time you'll have a delicious chicken dinner that the whole
family will love!
Cooking Instructions:
Prep Time: 15 minutes
Cooking Time: 45 minutes
*Makes about 8-10 servings
Ingredients:
- 1/2
cup butter
- 1/3
cup all-purpose flour plus more to dust
- 1/3
chopped onion
- Salt
and pepper
- 1 3/4
cup chicken broth
- 2/3
cup milk
- 16 oz
package of frozen vegetables
- 2 cups
cut up, cooked chicken
- Already made pie crust for a 2-crust pie
Cooking Steps:
Set oven to 425 degrees to preheat.
b) In a small saucepan melt your butter, and add the flour, onion, and salt and pepper, and cook for about
4 minutes. Then take the saucepan off the stove.
c) Gradually add the chicken broth and milk to the saucepan and keep stirring!
d) Put the saucepan back on the stove and raise the heat to a boiling temperature, and stir. The mixture
should become thick. Stir the mix for a few more minutes then take it away from the burner again. Add the
frozen vegetables and chicken.
e) Using your cast iron skillet (preferably 10-inch), place the pie crust carefully at the bottom and
sprinkle with some flour. Then carefully pour the mixture from the sauce pan into the cast iron skillet. Cover the skillet with the second pie crust, sprinkle more flour and
close edges of the pie. Be sure to poke little holes at the top.
f) Put the pie into the oven and let it cook for about 45 minutes. Take out, serve and enjoy! (Careful,
the food will be very hot!)
