Cooking Instructions:

Prep Time: 1 hour, 40 minutes
Cooking Time: 2 1/2 minutes
*Makes about 48 beignets

Ingredients:

  • 1 package dry yeast
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1 1/4 cups milk
  • 3 eggs, beaten
  • 1/4 cup melted butter
  • oil for deep frying
  • 1 cup confectioners' sugar

Cooking Steps:

a)In 4 tablespoons of warm water let the yeast dissolve.
b) In a large bowl, mix the flour, salt, and sugar. Be sure to blend well! Then add the yeast, milk, eggs, and butter. The dough should form nicely.
c) Put the dough in a metal bowl and place a towel (cheese cloth) over it. Let it sit for an hour to rise. Take the dough out of the bowl and put it on a well floured flat surface and cut the dough into small rectangles. Once again cover the rectangles with a towel for thirty minutes to rise.
d) Using your deep cast iron skillet or pot, set the stove to 375 to preheat oil.
e) Then carefully deep fry the beignets until they turn a nice golden brown. Put the beignets on a platter and add a lot of confectioners' sugar! Enjoy.
