Mouthwatering Roasted Potatoes

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

This dish can be cooked inside or outdoors! It is quick and very east make (only requires two steps!). The delicious seasoning used will draw you back for seconds. This recipe is made easily on your cast iron skillet and will great for any cookout.

Cooking Instructions:

Prep Time: 20 minutes
Cooking Time: 45-60 minutes
*Makes about 4 servings

Ingredients:

  • 2lbs mew potatoes, quartered
  • ½ cup onion, sliced very thick
  • ½ cup red bell pepper, sliced very thick
  • ½ cup yellow bell pepper, sliced very thick
  • 2 tablespoons garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 cup olive oil
  • 1 cup melted butter
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Creole seasoning
  • Salt and pepper

Cooking Steps:

A) Set oven to 400 degrees to preheat and place the potatoes in a large plastic bag (resealable).  In the resealable bag, put your onion, bell pepper, garlic, and herbs. Then add your olive oil, butter, and vinegar; evenly season the contents of the bag with salt and pepper and seal the bag closed. Careful not to reopen to bag, shake contents of the bag forcefully, mixing everything together to season.
B) Using your cast iron skillet (12-inch), reopen the bag and pour contents into the skillet and bake for 45-60 minutes. Carefully take out, serve and enjoy!
