New England Style Corned Beef and Cabbage

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

Contrary to popular belief, this dish doesn’t have anything to do with corn the vegetable at all. Preserving meats by using different salts and brine is called corning and this is the kind you will be using! But don’t worry, you do not have to do this yourself; you can buy a brisket that comes already corned and it is actually recommended for this dish.

Cooking Instructions:

Prep Time: 20 minutes
Cooking Time: 3-4 hours
*Makes about 8-10 servings

Ingredients:

  • 4 lb corned beef brisket
  • 2 teaspoons sugar
  • 1 tablespoon whole black peppercorn
  • 3-4 sprigs fresh parsley
  • 6 carrots, peeled and quartered
  • 1 medium onion, quartered
  • 8 medium potatoes, peeled and halved
  • 1 cabbage, cored and cut into 6 wedges
  • Salt

Cooking Steps:

A) Using your cast iron Dutch oven (preferably 7-quart), put the brisket inside and fill with water.
B) Put the sugar, peppercorn, and parsley into the oven. Raise temperature to a boil. Cover the cast iron oven, lower the temperature and let it cook for 2 hours. Occasionally, look into the pot to check the water level and add more if necessary. You always want the brisket to be completely submerged.
C) Then add the carrots, onions and potatoes into the cast iron oven. Cover the oven and cook for 30 minutes.
D) The last thing to add to the oven is the cabbage. Let it cook for an additional 15 minutes. Salt the dish to your liking! Carefully take the brisket out of the cast iron oven and put on a serving platter surrounded by vegetables.
