Oriental Chicken Stir Fry

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

This is a dish that requires very little time! Just get a hot skillet, some oil and you'll be good to go! It is vital that all of your vegetables and any of your other ingredients are cut and ready before you turn on your skillet.  This really is a speedy dish!

Cooking Instructions:

Prep Time: 20 minutes
Cooking Time: 7-10 minutes
*Makes about 4 servings

Ingredients:

  • 1/2 cup chicken broth
  • 3 tablespoons soy sauce
  • 2 teaspoons sugar
  • 2 teaspoons dry sherry
  • 1/4 teaspoon salt
  • 1lb boneless, skinless chicken breasts, cut into 1-inch strips
  • 3 tablespoons cornstarch
  • 2 scallions, chopped
  • 1 teaspoon freshly grated ginger root
  • 2 cloves garlic, minced
  • 4 tablespoons oil
  • 1 onion, sliced into 1/4-inch pieces
  • 1/2 red bell pepper, sliced into 1/4-inch pieces
  • 1/2 green bell pepper, sliced into 1/4-inch pieces
  • 8-10 mushrooms, sliced
  • 2 tablespoons hoisin sauce
  • 1/4 cup cashew nuts
  • 4 cups hot cooked rice

Cooking Steps:

a) Mix the chicken broth, soy sauce, sugar, sherry, salt, and tablespoon of cornstarch in a large, clean bowl. In another bowl, mix the chicken, 2 tablespoons of cornstarch, scallions, ginger, and garlic.
b) Using your cast iron wok (skillet), heat 2 tablespoons of oil (temperature should be very hot). Add the chicken into the cast iron wok and cook. Keep stirring until the color changes from pink to white. Once cooked, set aside in a bowl.
c) Add more oil to the wok and put in the onions, bell peppers, and mushrooms and cook (should only take about 3 minutes).
d) Place the chicken back into the cast iron wok to warm with the vegetables and add the chicken broth mix. Then, add the hoisin sauce and cashews.
e) Best served over hot rice (white or fried)
