  
Phenomenal Fajitas
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create
some great cast iron cooking for your family and friends!
This recipe requires marinated beef; however, if you choose to
substitute it with chicken or pork it will work just as well. This delicious Mexican dish is easy to make and
very easy to eat! You may have to pull yourself away from its dangerously good
flavor!

*Makes about 4 servings
Ingredients:

10-inch flour tortillas
- 2 lbs
marinated flank steaks, pounded to ?-inch thickness
- 4
tablespoons butter
- 2
large onions, sliced and separated into rings
- 2
green bell peppers, sliced and separated into rings
- 1
package (8-10 oz) sliced mushrooms (optional)
- 4
tablespoons butter
- 2
limes, halved
- Pico
de Gallo
- Guacamole
Cooking Steps:
A) Set your oven to 425 degrees to preheat and put your cast iron griddle on the bottom rack. Heat the griddle
for 30 minutes.
B) On the stove heat a cast iron skillet or griddle for a few minutes.
C) Place a tortilla on the cast iron skillet and cook for 30 seconds. Flip and repeat on the other side
and stack the tortillas on aluminum foil to keep the heat.
D) Make the oven set to broil and place the beef (or meat of choice) on the top rack inside a pan. Broil
for 5 minutes on each side. Remember that the griddle is still on the bottom rack heating up!
E) Avert your attention back to the cast iron skillet on the stove. Melt some butter in the skillet and saute the vegetables
and onions. Evenly season with your salt and pepper. Move the pan away from the burner and let it sit.
F) Remove the meat from the oven and cut into strips. Also, very carefully take out the griddle from the
oven and lay it on a hot pad or oven mitt. Put the beef and vegetables on the hot griddle (this is how you’ll
serve it). Also, serve with the warm tortillas, lime halves, Pico de Gallo, and Guacamole.
