  
Savory Pico de Gallo

the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

Pico de gallo, meaning “beak of the rooster” in Spanish is quick
and easy to make, only taking about 10 minutes! But don’t worry, rooster beak is nowhere on the ingredient
list! It makes for a perfect side sauce to all your Mexican favorites.
Cooking Instructions:
Prep Time: 5 minutes
Cooking Time: 3 to 5 minutes Chilling Time: Until cold, or overnight
*Makes about 4.5 servings
Ingredients:
- 1 cup
peeled, seeded, and diced tomatoes
- 2
tablespoons olive oil
- 2
clove garlic, minced
- 1
poblano pepper, seeded and finely chopped
- ½
small onion, grated
- 2
tablespoons lime juice
Cooking Steps:
A) In a medium bowl put your clean, washed tomatoes.
B) Using a small sauce pan, cook your olive oil, garlic, and pepper for
about 4 minutes. Keep stirring!
C) When done, gently pour it over your tomatoes in the bowl.
D) Then add the onion and lime juice. Put in refrigerator, chill, and enjoy!
