Savory Swiss Steak

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

Usually steak tends to be tough but in this recipe the Swiss steak used is much more tender and ideal. You can even use an arm roast if a Swiss steak is not available. Either will be suitable for this delicious recipe!

Cooking Instructions:

Prep Time: 15 minutes
Cooking Time: 1½ hours
*Makes about 8-10 servings

Ingredients:

  • 3 lbs boneless round steak, cut into servings
  • 1 cup all purpose flour
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • ½ teaspoon garlic slat
  • 3 tablespoons vegetable oil
  • 1 cup chopped onions
  • ½ cup chopped celery 
  • ½ cup chopped bell pepper
  • 2 tablespoons garlic, diced
  • 1 can (28 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 2 tablespoons all purpose flour

Cooking Steps:

A) Beat the meat until tender between two pieces of wax paper.
B) Mix the flour, salt, pepper, and garlic salt in a bowl. Evenly coat the steak in the dry mix and pound into the meat.
C) Using your cast iron skillet (preferably 13-inch) heat up the oil. Cook the meat until brown and remove from cast iron skillet.
D) Next, put the onions, celery, bell pepper, and garlic salt into the cast iron skillet and cook for five minutes. Then put the steak back into the pan.
E) Put the tomatoes, broth, and soy sauce in as well and raise the temperature to a boil. Then lower the heat and cook for 1½ hours (with the cover on).
F) Once cooked, place the contents of the pan into a serving platter.
G) Mix 1 cup of cold water with the remaining flour until it is completely dissolved and pour into the sauce.
H) Now is the time to fix or alter any of the seasonings to your liking. Glaze the sauce over the meat on the platter, serve, and enjoy.
