Scrumptious Dove That You’ll Love

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

This recipe calls for a fresh dove or, you could even use a squab. It is very easy to prepare and cook and for all the savory flavor it brings it will soon become a family favorite! Also, this dish tastes even better with a serving of rice on the side.

Cooking Instructions:

Prep Time: 5 minutes
Cooking Time: 1½ hours
*Makes about 6 servings

Ingredients:

  • 12 doves, cleaned
  • Salt
  • All-purpose flour
  • ½ cup butter
  • 1 onion, chopped
  • 1 pint sour cream
  • 1 cup sliced mushrooms
  • 1 cup white wine
  • Paprika for garnish (optional)

Cooking Steps:

A) Set oven to 350 degrees to preheat. Using the salt, evenly season the doves. Repeat with the flour.
B) Using your cast iron Dutch oven (preferably 5-quart), heat a cup of butter to saute your onion. Wait until the onions turn a light golden color then remove and put a platter (remember to keep them warm).
C)  Add the rest your butter to the cast iron oven and cook the doves a couple at a time.  Each dove should take about seven minutes to cook. Once all doves are fully cooked, move them to the same platter that is holding your onions and continue to keep the platter warm.
D) Now, carefully place the doves and onions back into the cast iron oven and bake for 15 minutes.
E) While that cooks, take out a large bowl and mix your sour cream, mushrooms, and wine. After the 15 minutes are finished in the oven, take out the doves and onions and add the mixture in the bowl. Place back into the oven and bake for another 20 minutes.
F) Take out of the oven and sprinkle with paprika to serve. Enjoy!
