  
Scrumptious Funnel Nut Cakes
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create

This succulent dessert is a summer time favorite! The cinnamon sugar sprinkled
on top really gives the cake that extra punch! However, you could top these delicious cakes with just about
anything (fruit, powdered sugar, etc.). You can even go plain and they would still be great!
Cooking
Instructions:
Prep Time: 10 minutes
Cooking Time: 2 minutes per cake
*Makes about 8-10 servings (individual cakes)
Ingredients:
- 3/4 cup powdered sugar, sifted
- 1
teaspoon cinnamon
- 2/3
cup pecans
- 2½
cups self rising flour
- 3/4 cup sugar
- 1 2/3
cup milk
- 2
eggs
- ½
teaspoon vanilla
- Vegetable oil for frying
Cooking Steps:
A)In a bowl, mix the powdered sugar and cinnamon together.
B) Chop the pecans in a bowl with a knife blade, carefully. Put that, along with your flour, sugar, milk,
eggs, and vanilla into a food processor. Chop for 30 seconds.
C) Using a cast iron skillet, warm the vegetable oil to 375
degrees.
D) Evenly pour 3/4 cup of batter into the skillet and fry for one minute on each side. When complete,
set aside to drain.
E) Put even amounts of the cinnamon-sugar topping on the cakes and serve when hot!
