  
Simmered Black Beans

the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

This recipe gives a little twist to the regular soup bean. It uses
black beans instead of navy beans. And they are found in the same aisle as all other
beans.
Cooking Instructions:
Prep Time: 10 minutes
Cooking Time: 2 and 1/2hours *Makes about 6 servings
Ingredients:
- 1
pound of black beans
- ¼ pound of sliced salt
pork
- 1
chopped onion
- 2
chopped cloves garlic
- 1
sliced and peeled carro
- 2
chicken bouillon cubes
- Salt
Cooking Steps:
A) Rinse the beans
B) In your cast-iron skillet, fry the salt pork over mild to high
heat. Reduce the heat to cook the carrot, garlic and onion, until the onion is transparent.
C) Add the bouillon cubes, beans, and enough water to cover.
D) Bring to a boil and then simmer with the cover on for about 90-120 minutes. Stir every now and then and
add water too in order to keep the beans covered with liquid.
E) Add salt during the last phase of cooking in your skillet.
