Catfish
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

Rising in popularity, catfish is now commonly used in everyday
seafood dishes. When cooking catfish, be sure to first take away all skin and fatty tissue. This tissue
contains a very, very strong fishy taste and is often not desired in the
dish.

*Makes about 4 servings
Ingredients:
- 4 catfish fillets (about 1½ lbs)
- 1 cup buttermilk, or enough to cover the fillets
- Salt and pepper
- Cajun seasoning
- 1 cup cornmeal
- Canola oil to fill skillet ?-inch deep
Cooking Steps:
A) With buttermilk in a flat dish soak the fish fillets
for about 20 minutes.
B) Gently place the fish on the wax paper. Throw out the buttermilk and evenly season the fillets with
salt, pepper, and Cajun seasoning. Add some cornmeal.
C) Using your cast iron skillet (12-inch) heat your oil. Put the
fillets in the cast iron skillet and cook for about 2 minutes on each side.
D) As the color turns to a nice brown, lower the temperature and complete
cooking.
