Delicious Southern
Style Cornbread!
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create
some great cast iron cooking for your family and
friends.
Contrary to popular belief, true cornbread from the South is not
sweet, using practically no sugar at all. What really gives southern cornbread its flavor is the butter milk
and bacon grease, and you’ll find that this cornbread tastes extra good when baked in cast iron cookware!
Cooking Instructions:
Prep time: 10 minutes
Cooking time: 30-40 minutes
*Makes about 8 servings
Ingredients:
- 3 tablespoons bacon grease, or vegetable
oil
- 2 cups white, self-rising cornmeal
mix
- ½ teaspoon baking soda
- 2 eggs, beaten
- 2 cups butter milk
Preparation Steps:
A) Set oven to 450 degrees for preheat.
B) To get cast iron skillet hot, coat the skillet (preferably
9-inches) with bacon grease and place it in the oven.
C) Using a spoon, fork, or whisk, blend the cornmeal mix,
baking soda, eggs, and buttermilk in a bowl.
D) Remove the hot skillet from the oven and carefully pour the
bacon grease into the batter and quickly stir it in.
E) Now pour the batter mix into the skillet. It is common for the batter to buzz and sizzle.
F) Bake for 30-40 minutes. (Usually when done, it appears to
be golden brown)
G) When done baking, carefully remove the skillet from the oven to cool (around 7-10 minutes). Once cool, flip it onto a plate, and
cut it into slices to serve. (Best served hot with butter!)
