Spicy Enchilada Casserole

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

What exactly is an enchilada? An enchilada is simply meat wrapped around a warm tortilla and served with spicy sauce and melted cheese. Now to make this into a casserole, you just have to layer the ingredients rather than roll, making this dish easy to make and serve, and very ideal for outdoor events!

Cooking Instructions:

Prep Time: 5 minutes
Cooking Time: 50-60 minutes
*Makes about 8 servings

Ingredients:

  • 2 lbs ground beef
  • 1 large onion, chopped
  • 1 can (10 oz) tomato soup
  • 2 cans (10 oz each) enchilada sauce
  • 8 (10-inch) flour tortillas
  • 3 cups grated cheddar cheese
  • 1 cup sour cream

Cooking Steps:

A) Using your cast iron camp oven, cook your ground beef and onion until the meat turns brown and the onions are tender. Remember to cook over the 24 hot coals!
B) Take the beef and onion out of the cast iron oven and place it into a large bowl.
C) Next add the soup and enchilada sauce into the bowl and stir. In the cast iron Dutch oven, put a ?-inch layer of the mixture and cover with a layer of tortillas. Then cover tortilla layer with grated cheese.
D) Carefully repeat the layering steps until the cast iron Dutch oven is full. Make the last layer a thick layer of cheese.
E) Cover the cast iron oven with lid; as well as place about 15 hot coals on the lid as well.
F) Let the casserole bake for 35-40 minutes. Serve with sour cream.
