  
Sweet Cranberry Acorn Squash

This is great dish to complement and poultry, pork, or even game. Also, this
recipe is ideal for autumn, as it really brings out the flavors of the season. A quick, easy dish that the entire
family will love!
Cooking Instructions:
Prep Time: 5 minutes
Cooking Time: 35 minutes *Makes about 6 servings
Ingredients:
- 3
acorn squash
- ? cup butter
- 1 cup diced onion
- ½ cup brown sugar
- ½ cup fresh cranberries
- 1/4 cup chopped fresh parsley
- 1 cup chicken broth
- ½ teaspoon chicken broth
- ½ teaspoon salt ½ teaspoon pepper
Cooking Steps:
A) Carefully peel the skin off the squash. Then, seed and dice into cubes (about
½-inch).
B) Using your cast iron skillet (preferably 12-inch) slowly melt the
butter. Then put the onions in the skillet and cook for 5 minutes. Throw in the squash cubes and cook for
another 5 minutes.
C) Then put your sugar, cranberries, and parsley into the cast iron skillet and cook for 5 minutes.
D) Add the broth, stir, and season with salt and pepper. Let it cook for 20 minutes in the cast iron
skillet.
