Sweet Tea Cake with Infusions of Cherry

This delicious cake is the perfect complement to your afternoon tea! This may
come as a surprise but, to really make the flavor in this dessert pop, you have to handle the pineapple with
extreme care. And make sure to drain it well because no one enjoys a soggy cake!

Instructions:
Prep Time: 15 minutes
Cooking Time: 25-30 minutes
*Makes about 10-12 servings (individual cakes)
Ingredients:
- 1
3/4 cup all purpose flour
- 2 cups
candied red and green cherries, chopped
- 1 cup
walnuts, chopped
- ½ cup
butter
- ½ cup
sugar
- ½
teaspoon baking powder
- ½ teaspoon salt
- 3
eggs
- 3/4 cup drained crushed pineapple
- Orange
glaze
Cooking Steps:
A)Set oven to 350 degrees to preheat. Also, place a well greased cast iron muffin pan in the oven as well.
B) In a small bowl, mix the flour, cherries and nuts.
C) In another bowl, cream the butter, and add in the sugar, baking powder, and salt. Mix for 5 minutes.
Add the eggs and add the flour mix. When stirred thoroughly and the pineapple.
D) Gently pour the well mixed batter into the cast iron muffin pan and place into the oven. Bake for 25-30 minutes.
E) Take out and evenly coat the tops of the muffins with the orange glaze.
