  
Tasty Gullah Rice
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked
meals. We have collected hundreds of recipes over the years and we hope you will use them to create
some great cast iron cooking for your family and friends!
Brown or white rice can be used in this recipe, however long grain rice is the best fit for this
recipe. Remember not to use instant rice; it gets stale and soggy before the other ingredients can be
made.
Cooking Instructions:
Prep Time: 20 minutes
Cooking Time: 55 minutes *Makes about 6 servings
Ingredients:
- 2 pounds of smoked sausage
- 2 tablespoons of vegetable
oil
- 1 cup of chopped onions
- 1 cup of chopped red bell
pepper
- 1 or 2 chopped jalapeno
peppers
- 2 cups of uncooked rice
- 1 teaspoon of brown sugar
- 1 teaspoon of salt
- 1 cup of chopped tomatoes
- 2 ½ to 3 cups of chicken
stock
- 1 cup of cooked black
beans
Cooking Steps:
A) Cook the sausage in your cast-iron Dutch-oven. Then take out the sausage and save the fat. Add enough oil to make
4 tablespoons of fat/oil.
B) Add the onion, bell pepper, and jalapeno. Cook over mild heat for about 10 minutes.
C) Add the rice and mix in the sausage sugar, salt and tomatoes. Pour in the chicken slowly and mix
well.
D) Boil the mixture and cover. Cook for about 20 minutes.
E) Remove from the heat source and stir the black beans in. Serve hot.
