What you do is apply a layer of lard or cooking oil on the surface, heat up the oven up to 300 degrees and leave your griddle in the oven for about two hours. The oil will fill up the miniscule crevices on the surface of the cast iron, which can cause foods to stick to the surface when cooking. This coating can actually last as long as it is not scratched off so be sure to use wooden or nylon utensils when cooking with your cast iron cookware. Acidic foods like tomatoes should also be cooked in non-iron griddles since the acid can also remove the layer.
