Tropical Upside Down Cake

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

The caramelized fruit is a vital ingredient in this dessert, as well as the delicious sugar topping. This is a true, classic cast iron creation! Its moist, delectable taste will leave your guests wanting more.

Cooking Instructions:

Prep Time: 15 minutes
Cooking Time: 45 minutes
*Makes about 8 servings

Ingredients:

  • 3 tablespoons butter
  • 1 cup light brown sugar
  • 7 slices canned pineapple 
  • ½ cup pineapple juice reserved
  • 7 candied cherries
  • 10-12 to pecan halves (optional)
  • 3/4 cup raisins (optional)
  • 3 eggs 
  • 1½ cups white sugar
  • 1 teaspoon vanilla
  • 1½ cups all purpose flour
  • 1½ teaspoons baking powder
  • 3/4 teaspoon salt

Cooking Steps:

A)Set oven to 350 degrees to preheat.
B) Using your cast iron skillet (preferably 10-inch) melt the butter and sprinkle with brown sugar. Once mixed well, take it off the burner.
C) Using the cast iron skillet, gently place the pineapple slices in and put a cherry in the center of each ring. You can put the pecans and raisins in between the rings as well, if desired.
D) Using a clean mixing bowl, beat you eggs and add sugar, vanilla, and reserved pineapple juice.
E) In another bowl, blend the flour, baking powder, and salt with a large spoon. Once mixed well, add it to the egg mix.
F) Gently pour the batter into the cast iron skillet (with the pineapple and all) and bake for 45 minutes. When complete, flip it onto a serving platter and enjoy! (Best served warm).
