Yankee Yellow Cornbread

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends.

For people who enjoy eating their cornbread yellow and sweet, this recipe is perfect! You have the control to make your cornbread as sweet as you would like simply by changing the amount of sugar you add to the mix. You are free to experiment! After creating your cornbread you will know whether to add more or less sugar to satisfy your palate.

Cooking Instructions:

Prep Time: 10 minutes

Cooking time: 20-25 minutes

*Makes about 8 servings

Ingredients:

- 2 ½ cups yellow self-rising cornmeal mix

- ? cup sugar

- 1 cup milk

- ? cup vegetable oil

- 2 eggs, slightly beaten

Preparation Steps:

A) Set oven to 425 degrees for preheat. Make sure to thoroughly grease your cast iron skillet (preferably 10 inches).

B) Using a spoon or whisk, make sure to blend the cornmeal mix, sugar, milk, oil, and eggs in a bowl.

C) Place the skillet into the oven and let it bake for about 20-25 minutes. Also, try inserting a toothpick into the center. If it comes out clean with no batter stuck to it, then your Yankee Cornbread is complete.
