Yummy Cornish Hens

Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected hundreds of recipes over the years and we hope you will use them to create some great cast iron cooking for your family and friends!

These delicious, small hens serve about 1-2 people. You can also cook it many ways! You can broil, roast, or even stuff the chickens. Also, this recipe goes perfect with some hot wild rice.

Cooking Instructions:

Prep Time: 5 minutes
Cooking Time: 1 hour
*Makes about 8 servings

Ingredients:

  • 4 Cornish hens, halved
  • 4 teaspoons salt
  • 1 teaspoon pepper
  • 6 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon sage
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon marjoram
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon paprika
  • 1/4 cup sherry
  • 1/2 cup chopped fresh parsley

Cooking Steps:

a) Set oven to 375 degrees to preheat. Using the salt and pepper, gently season the hens, then coat with some flour.
b) Using your cast iron Dutch oven (preferably 5-quart), melt the butter and heat your oil; then, add your sage, thyme, marjoram, chili powder, and paprika.
c)  Cook each of the hens until they brown evenly (takes about 12 minutes each). Set them aside from Dutch oven when done.
d) When every hen is browned, carefully put all of them back into the cast iron Dutch oven and bake for about 20 minutes. Then place on a serving platter.
e) Put the Dutch oven on the stove and heat. Add sherry to the cast iron skillet with the rest of the pan juices and cook for 2 minutes. Add the parsley as well.
f) When ready, pour the sherry mix over the browned hens. Serve and enjoy!
