  
Zesty Corn Maque Choux
Cast iron cooking is as popular now as it was centuries ago. As in
the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

A combination of vegetables, shrimp, and spicy meat. Be sure to pick soft, well developed ears
of corn. Cut the corn lengthwise to remove the kernels from the cob. How much milk and pulp that can be
scraped from the cobs depends on this step.
Cooking Instructions:
Prep Time: 20 minutes
Cooking Time: 50 minutes *Makes about 8 servings
Ingredients:
- 8 ears of corn
- About 3 teaspoons of bacon
drippings
- 1 cup of chopped onions
- ½ cup of chopped celery
- ½ cup of green bell peppers
- ½ cup of red bell peppers
- 1/4 cup of diced garlic
- 1/4 cup of finely diced
andouille
- 2 cups of chopped tomatoes
- 2 tablespoons of tomato sauce
- 2 cups of peeled and deveined small
shrim
- 1 cup of sliced green onions
- Salt and pepper
Cooking Steps:
A) Remove all milk and pulp from each corn cob using a blade.
B) Melt the bacon drippings over medium heat in your cast-iron
chicken fryer.
C) For about 15 minutes, saute the corn, onions, celery, bell peppers, garlic and andouille.
D) Keep cooking for about 15 minutes until the juices are visible and after adding the tomatoes and tomato
sauce.
E) Also, add the shrimp, green onions, and salt and pepper. Cook for another 15 minutes until fully
cooked.
