  
Zesty Pumpkin Muffins

the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other
types of cast iron cookware are capable of producing an amazing array of delicious, home cooked

Instructions:
Prep Time: 10 minutes
Cooking Time: 20 minutes
*Makes about 12 servings
Ingredients:
- 2/3
cup of sugar
- 1
egg
- 3/4 cup of vegetable shortening
- ½ cup
cooked fresh pumpkin
- 2
tablespoons of milk
- 1 cup
of all purpose flour
- 2
teaspoons of baking powder
- 3/4 teaspoons salt
- 1
teaspoon of salt
- 1
teaspoon of ground cinnamon
- 1/8
teaspoon of ground cloves
Cooking Steps:
A)Preheat to 350 degrees and grease your cast-iron muffin pan.
B) Cream together the sugar, egg and shortening in a bowl. Mix in the pumpkin and milk.
C) Mix the flour, baking powder, salt, cinnamon and cloves in a separate bowl. Mix the wet and dry
ingredient together.
D) Put the batter into the pan with caution until it is about 2/3 full. Bake at 350 degrees for 20
minutes.
