The time window in which fish is perfectly cooked right is very
small. A matter of minutes can make or break the taste of the fish, in this recipe, salmon. Salmon is best
cooked when the skin is mostly opaque and flaky.

Ingredients:
- Salmon fillets for two 8 ounce
servings
- Juice of 1 lemon
- Salt and pepper
- Chopped, fresh dill
- 2 tablespoons of butter
- 2 lemon halves
- Fresh dill spring
Cooking Steps:
A) On both sides of the salmon, squeeze lemon juice and
sprinkle salt and pepper. Put the fillets in the refrigerator for 30 minutes.
B) Put your cast iron skillet over a burner with medium-high heat.
C) Heat the butter in the skillet without burning it. Put the salmon in the skillet with the skin side facing down. Sear for about 2 minutes. Depending on the
thickness, flip the salmon over and sear for 2 to 3 minutes and be sure that it is cooked
through.
D) Serve with additional topping like lemon halves or fresh
dill.
